If you haven’t stopped by my favorite cooking website, Karina’s Kitchen, and you have gluten problems, you really must! Whether you are celiac or have allergies, living without gluten can leave you feeling deprived and resentful. Karina helps you forget all that with her tasty, creative dishes.

Looking for something to use up your Thanksgiving leftovers? Karina’s most recent creation is Turkey and Sweet Potato Enchiladas. The picture posted on her website looks so tasty it was difficult not to drool.

The ingredient list for this recipe will have you thinking of a winter vacation down south – especially if you are a fan of the US southwest. These beauties use some classic Tex-Mex ingredients. (After all, Karina is living in the wilds of New Mexico.)

If you are living in the wilds of Canada (like I am) you might have to do some shopping to have all the required items. You’ll need some salsa, a couple of limes, a little cumin, some roasted green chilies, and a few gluten-free corn tortillas. Leftover sweet potatoes are perfect, but you can always cook up a couple cups of these nutrition-packed beauties, just to make this tasty dish.

The recipes looks relatively easy to make (although Karina is an expert chef, and sometimes asks more of me than my cooking skills allow). It’s mostly mixing of ingredients and then stuffing and rolling your enchiladas. Once you are done with the preparation, you bake the enchiladas in a 350 degree Fahrenheit oven for 30 minutes. Assuming you do have left-over sweet potatoes, you’ll have supper on the table in less than an hour.

We’ve lived gluten-free in our house for many years. One of the things I found most challenging was ensuring variety. Most of my favorite recipes had gluten in one form or another. Karina’s site allows you to get more variety in your diet as well as eat well.

Some tips for those avoiding any kind of allergen: in general, simple dishes are best. Know all the ingredients that go into your dish. Prepared foods are generally a bigger risk than fresh, raw ingredients. When in doubt, consider making your own salsas and preserves. Not only is it fun, but you’ll know exactly what’s in those jars.
